Following researches and market surveys, Mauri spa lately decided to move part of Gorgonzola maturing from Novara to the Pasturo plant. Massimo Del Pozzo, export manager, explained that “some markets, particularly the foreign ones and those of spicy Gorgonzola, requested an alternative maturing for Gorgonzola, a more tasty one”.
For this reason, parts of the Pasturo caves were recently refitted to house the maturing of more than 15.000 Gorgonzola cheeses. “…the caves and their environment allow Gorgonzola to mature in a different way, giving to the cheese an even more particular taste” reported Massimo del Pozzo. From last May, Gorgonzola processes of stewing, salting, piercing and maturing have been carried out at the Pasturo plant.
