Blumauri
A quality Blue Cheese produced using 50% cow’s milk and 50% goat’s milk. Its long ageing period (90 days) together with the great care taken during processing and the addition of goat’s milk make this an extraordinary, very refined product.
Fioroni capra stagionati
Real specialities for those who love a strong flavour, to be eaten with oil and pepper or with polenta. Made using full-fat goat’s milk. They are aged for at least 30 days in the grottoes in Pasturo, resulting in a reddish crust and even cheese with a particularly salty, mature taste.
Caprinella
Soft goat’s milk cheese. Its short ageing period (10-15 days) encourages the growth of white moulds on the surface, this product’s characteristic. Its delicate taste makes it a product suited to all uses.
